A customer orders his steak “rare.” What would be an appropriate cooked temperature?

The minimum safe temperature of cooked food is 135 ºF. While a cooked temperature of 160 degrees Fahrenheit or 180 degrees Fahrenheit is safe, it would not meet the requirements of a “rare” steak.
